So I have been craving carrot cake now for about the past 2 weeks and I finally decided to make some. I've been surfing around pinterest looking at all the delicious carrot cake recipes, so giving me some inspiration I've created this mouth watering delicious cake.

I love muffins, they are so good for breakfast or a snack. Especially moist banana muffins. I had some bananas and zucchini that needed to be used up, last time I made a zucchini banana bread loaf. It was super delicious but I thought this time I would try and make some muffins instead.

So yesterday I had some left over chickpeas from making my chocolate chip chickpea cookies, I figured why let it go to waste when I can make something with them for dinner. I was craving something with yams but wasn't sure what to make, when I had the thought of a yummy veggie burger. I whipped this recipe together and it turned out great, go ahead and make some burgers for your dinner tonight.

Mmm mmm mmm. I LOVE chocolate, like I'm kind of addicted to it.. but I don't over indulge like I used too. Instead I created a healthy guilt free recipe just so I could enjoy my splurge of chocolate for the day. Today I finally corrected my recipe for my chocolate chip cookies. They are so good and such a hit with my boyfriend.. what can I say he already ate half of them!!
Vegan & gluten free lasagna (February.19,2014)
Mmmm yeah that's right look at how delicious this lasagna looks. Tonight I wanted to make a lasagna without the noodles, so I replaced the noodles with slices of zucchini.
I had a bunch of peppers in my fridge that were starting to go and I needed to use them up before they went to waste. So I decided to make some stuffed peppers. These peppers are stuffed with quinoa & yams and they are VEGAN and GLUTEN FREE.
