I had some left over chickpeas today from making my chocolate chip cookies so I figured that I better not let them go to waste. I was craving something with yams and quinoa for dinner so I thought I might as well try and make a veggie burger. I whipped this recipe together and it surprisingly turned out great! Totally hit the spot. Enjoy the recipe my loves!
-2 cups of cooked quinoa -1 large sweet potato -1 celery stalk -1 green onion stalk -1 cup of soaked chickpeas (canned is fine) -1 tbsp of dried garlic powder -pinch of salt -12 pieces of vegan cheese
Chop the sweet potato and boil it until it is soft.
While the sweet potatoes are boiling, dice the celery and green onion.
Add the chickpeas, onions, celery and garlic powder into a food processor.
Once the sweet potatoes are soft add them into the food processor as well.
Blend all the ingredients until they are smooth.
Once the it has been blended place it in a mixing bowl along with the cooked quinoa and mix well.
Take half cup portions and shape them into patties, on medium heat cook them in a pan with oil until each sides are brown.
After cooking the patties place them onto a baking tray, slice 12 pieces of cheese and place 2 on each one.
Bake the patties in the oven on 350 degrees for 5 minutes. Top the burgers with which ever you please. Enjoy!! Don't forget to tag me in your posts on instagram using the hashtag #getufitlook @getufit
