Got a bunch of peppers that need to be used up? I did! I decided to make some stuffed peppers for dinner last night. Were they ever delicious, they were a major hit according to my lovely boyfriend. The best thing of all is that they are vegan AND gluten free. The full recipe is below, EJOY!
-2 cups of cooked quinoa -1 large yam -1/2 cup of salsa -1 green onion stalk -7 peppers -2 cups of spinach -1/2 cup of tofu -1 cup shredded vegan cheese
Dice the yams, green onion, spinach and the tofu. Saute them on medium heat until the yams are soft.
Once the veggies are done sauteing mix them with the quinoa and salsa.
Cut the peppers in half and gut the insides. Stuff the peppers with the mix.
Shred the cheese and place it on top of the stuffed peppers.
Bake the peppers in the oven on 375 degrees for about 25 mins or until your preference. Top them with what ever sauces you want and enjoy!
